Foodie Friday: Celebrate Earth Day Everyday With Sustainable Recipes Like This One!
Even though Earth Day is tomorrow, I think we should celebrate the earth everyday, and what better way to do it than with a sustainable recipe for Foodie Friday!
We are officially in Spring, and even though today may be a little cold, we are headed for some seriously warm days. And nothing tastes better on a warm day than a refreshing dessert. So todays recipe is a poached nectarine in a Lavander honey syrup. But before we get into the breakdown of this recipe, John E. Peakes Insurance Agency and myself, want to share why we chose this recipe for today and how this Foodie Friday recipe is good for our earth.
An environmentally friendly way to live our lives are to be as sustainable as possible. But what does sustainable mean? According to Merriam-Webster's dictionary, sustainable means a method of using resources so that the resource does not deplete or become permanently damaged. For many years we were using up our resources before they even had a chance to replenish. This was, and still is, damaging to our earth and many populations that inhabit it. Although we have done some irreversible damage, more and more people are switching to live a more sustainable life, which is really benefitting the earth. This means using food production methods that are healthy, do not harm our environment, are humane to animals, humane to the workers, and stay local in their habits.
As mentioned, one way to live more sustainably is to shop local, and a great way to do this is by visiting your local farmers market instead of your major supermarket. One of my favorite things to buy at the farmers market are their fresh fruits and vegetables. Spring time brings about one of my favorite fruit at the farmers market, the nectarine. And this brings us to our recipe. Because the farmers market only sells in season food grown or raised on local farms, by shopping there you are helping our earth, and therefore, celebrating Earth Day everyday!

Poached Nectarine in a Lavender Honey Syrup
- 4 cups of water
- 3/4 cup organic unprocessed sugar
- 3/4 cup organic raw honey from your farmers market
- 2 teaspoons dried lavender buds
- 6 organic nectarines from your farmers market, halved and pitted
- 6 cups vanilla yogurt, soy ice cream, coconut milk ice cream, or any other type of dairy or non dairy ice cream you would like
Bring first 3 ingredients to a boil in a Dutch oven or any other large pot. Stir until sugar is dissolved. Stir in lavender buds. Add the nectarines. Reduce heat and simmer for 8 minutes or until nectarines are just tender. Remove nectarines with a slotted spoon. Bring the leftover liquid to a boil and cook until it is reduced to 3 cups, approximately 10 minutes. Allow to slightly cool then serve the syrup over the nectarines and add the yogurt.
This recipe is not only sustainably made, but it is also very easy.
